Replacing the floors and debating on replacing the foam between the stringers under the floor. The foam seems to be in good shape and holding strength but am wondering if the foam nowadays would be better than the original that was poured 24 years ago. Also what density foam is recommended when re pouring the foam? Thoughts and opinions appreciated.

Have you core-sampled the foam and the structure below the deck? It's not very common for the floor to rot but for everything below to be dry and solid.

If the foam is in fact dry and in good shape, I would not replace it. It's just two-part urethane foam (probably 2# foam). If it's really OK, no need to replace it. The new stuff wouldn't be any different... just newer.
