Changed the I pellet and associated components yesterday, had plenty of water with the ears but when I put it on the lake today it overheated and set off the alarm, which I am thankful for....any how I took the lower end apart when. I got back home to make sure the water tubes were connected, reassembled and get the normal water flow, I let the engine idle for about 20 minutes at which time it produced 113 degree water and. No alarm. Is 113 normal? Or I sit low. This morning it was screaming I'm too hot and it was producing steam out the tube.

Any ideas why it would work with the ears and not at idle at the dock (less than 10 min idle)

When using the muffs, there is water pressure in the hose, forcing water into the engine.

Check the water tube again, make sure it is still attached at the powerhead.

Remove the thermostat and check that too, or just replace it.

So if I understand the thermo should be closed (no water coming out the pee tube) until the temp comes to approx 130 then allows water to cool it down again. So does it matter that there is no water coming out the tube until the thermo lets it, with no thermo there is plenty of water at idle, but with the thermo in I was getting no water flow unless it was made to idle faster,

If pee tube=tell tale, no. Water exits the tell tale whenever the engine runs, regardless of temp.

Yes tell tale. Someone educate me on how the thermostat can keep water from coming out the tell tale. Removing the thermo allowed water to come out but with it installed it had no water coming out of the tell tale unless it was at a slightly higher RPM, at idle no water

With the Chrysler outboard (no tell tale) there is no water coming from the top exhaust untill the thermostat opens, I had a similiar problem on the water, the person before me had installed the thermostat in reverse, it would open up and have water coming from the exhaust BUT! at any higher than idle say around 3/4 throttle it would go into alram, I installed a new water pump housing and impellor, still no joy, then I finally got the thermostat housing off to find a reverse thermostat severely corroded and jammmed 7/8 closed. So it would let enough water through at idle but not enough at 3/4 throttle. By the looks of your motor at iboats part list, you have the same type housing and thermostat and by the looks of the tell tale it comes after the thermmostat as it seems to be mounted on the thermostat housing. does this sound right, as I am going off a picture from iboats parts listing for a 1998 75hp force.

If the thermostat is in good condition it regulates the temperature by opening and closing in comparison to the running temp. Some of the Chrysler outboards used a 110 deg F thermostat and some a 140 deg F, I am not sure but I believe the buzzer goes off at 160. I am not sure why the tell tale would be on the cold side of the thermostat, but it would indicate that you either had a thermo problem or a pump problem, the idea of the tell tale I thought was to still let some water circulate and an indication of your impellor condition. So I am not sure why yours seems to have it on the cold side of the thermo. on the Chrysler there is a grub screw before the thermo housing of which you can add a tell tale. Hope this helps, but have a look at your model parts listing, it gives an idea where it is.
