When in reverse the motor pops up out of the water. I have tried to figure out if a pin or something is missing up am having trouble, I know nothing about motors. The model 856x8a Serial 4066, operating range 4500-5500. Also how do I figure out what year the motor is. I also am having problems with the motor dying when trying to run slow or shifting between forward and reverse not good when trying to dock a 45 foot houseboat.

The motor is flipping out of the water in reverse because you didn't lock it down. There's a small tab in the front of the engine that you have to throw 180 degrees to lock the motor in place.
Try raising your idle to see if that stops the motor from shutting down.

If your motor has power trim, you have a problem there, as power trim motors do not use a latch. Without power trim, the Latch engages automatically when put into reverse.
Increasing the idle speed should help the stalling problem, but you probably have Carbon buildup and may need to Decarbonize.
Your motor is a 1988 model
