Fresh and briny stripers.

Is there a difference in taste between the fresh water stripers and the ones we catch off our sea coast?

As I understand it, they're the same species, same characteristics and everything. In fact, don't the saltwater stripers run up into rivers & spawn in fresh water? They only spawn (successfully at least) where there is sufficient current to keep the eggs afloat until they hatch. Lake Texoma has a self-sustaining freshwater striper population & I believe those deep water lakes in Arkansas do to. Don't know about elsewhere.

good question rolmops .. I couldn't say myself -never had either but, I'd sure like to know for sure.<br /><br />Seems to me that the fresh water Stripers would be more pungent because of water temps and such.. but, thats just a brain fart.<br /><br />Looking at NY & Boston fish market prices Hybrids are 10% more? size maybe??<br /><br />.. but, there again - a brain fart.

Eaten both, and really didn't taste any difference. They are good eating, as long as you remove the red, fatty, lateral line.
