I have a g3 1756 cc dlx yamaha F70 with the factory aluminium prop. I bent it this past weekend and am looking to buy a stainless prop. I am happy with the performance of the boat and was wondering if I should just buy the same pitch and diameter prop just in stainless. Should the boat perform the same?

in my limited experience you might loose some RPM going to stainless but it will run better at the same pitch. In my case my stainless is slower top end than my aluminum prop - i have no idea why but i suspect the extra blade area and diameter could be the reason. My bottom and mid range are better. I doubt you are worried about hole shot on a fishing boat so staying the same pitch will be fine as long as your are already in the correct rpm range for your engine.

Really can't make an informed suggestion without your prop size,Year of the motor, lightly loaded wot(wide open throttle) rpm and gps speed.
While a ss prop should improve overall performance over an al prop; results could be a few tenths up to a few mph from a well setup al prop.
A ss prop is more rugged than al. And will hold up better against soft contact mud, sand etc. However it will cost more to repair.
If you boat where hard contact is likely stainless could quickly become expensive.
