That's a very general question, but my general opinion would be that Sierra gaskets are as good as OEM gaskets.

Unfortunately, I do not think there is an easy answer to that question. Most aftermarket gaskets I have seen do seem to be as good as OEM. I did see a markedly better Mercruiser Exhaust riser gasket (silver in color), versus the green Sierra gasket. Probably both work just as well when risers and mannys are new, but when they get some rust (they are are cast iron, after all), the Mercruiser gasket is much better, as it is coated with some kind of sealer and a bit thicker.

There may be other examples of this, that I have not run into.

I have used Sierra gaskets when I could not find the OEM ones and have never had any problems.

They all work. The paper gaskets from Sierra seems a bit thinner and not sealing as good as the original if the sealing surface is not perfect. However the most important is the use of Sealing Compound (Loc-Tite Aviation) on all gaskets (except carb and intake) when installing.
Used a lot of Sierra gaskets when OMC bellied up, but reverted to the originals as soon as BRP was up and running.
