getting aggravated

first off ty all for all the helpfull info ideas and things to do from iboats...
the basics, seanymph fm146, johnson 30hp 10x13 prop
first issue was speed, tapps out at 26mph on gps, with just me in the boat, all 145lbs of me...i can deal with that
second was cavatation, antiventialation plate, cavatation plate sat 1 inch below the hull....fixed that today and raised it up to even with the bottom of the hull.....took the test ride with my old man, probly pushing a good 180ish lbs.....half to 3/4 all well and good, more and blows a hole and winds up again....leave it at half to 3/4 throttle eventually picks up speed and managed to hit 21 on the humminbird 161 gps fishfinder
and all this is without the hydrofoil on....so all in all, boat runs like a dream with just me in it, put a load on and bogs it down badly.....so my question is what is the next step? and yes the prop is brand spanky new, was told the lower pitch the better for a load on....next step for me is a tach

Are you sure That the engine is the right height ? Almost sounds like the prop hub (could) be slipping under load.

no power trim, second notch from the transom.....waiting on the tach in the mail..and the prop is brandy new....michigan prop

Do you have a larger picture of the boat? From the little picture it appears the AV plate is well above the keel but it is hard to tell. If that is a "before" picture and you raised the engine, it is way too high. In my experience, Michigans do not like high engine height and they do exactly what you describe.
