Very old gas, 5 yrs, however engine starts and runs above 1200 or so rpm's very nicely, hoever trying to bring it back down to 800 for idle speed, it dies right away. I cant seem to adjust the mixture to solve this with the idle mixture screwes. Choke is wide open and when I actually close it partway when boat is idling at 1200 rpm, it will rev up another 300 or so rpm, indicating to me the mixture is to lean, possibly not enough octane in the gas?

Five year old gas is too old. Start with fresh gas, and a clean fuel system.

Would that be enough for it to die only when backing off below 1000rpm? It runs great with no sputters or misses at higher idle's.

old gas has probably gummed up fuel system, restricting flow. For a quick fix try new gas and a couple cans of seafoam.
