should be around 140f - 160f degrees one side will run a tad higher than the other as the water flows from one cylinder bank to the othe and as it does it gets hotter when it enters the second bank
its normal for one bank to be about 10 degrees hotter than the other...

The above temps (140-155) are when idling. The head temps will go down dramatically when on plane. The pressure relief valves will open in the thermostat housing, flooding the block with extra cooling water. Your temps could go down well below 140 when planing, esp if running in cold water. The overheat horn comes on at 212 degrees, and will silence when the heads get back down to 175 which is still considered too hot, for normal operation.

On a side note, Harbor Freight has the Infrared Temp Guns on sale for $39.98. (just went through this whole round of questioning, lol)
