How do you raise a transom?

I have a 14' aluminum with a 9.9 hp shortshaft tiller on it and I also have a 25 hp merc tiller longshaft. I was told by a lund dealer that they "build up" transoms for long shaft motors all the time. If they can do it than so can I...except i'm not sure how.
Way I figure it, do i pry the aluminum cap off transom then somehow pry out the wood inside, trace that bottom outline to some new wood, trace the top outline to it 20" higher and then drop it back it. That seems easy enough BUT after that the wood would be exposed because it sits higher.
How do i cover that or tie it into the existing aluminum "skin"?

That method works and so does using two aluminum plates that will sandwich the current transom, the gap is fill with the correct amount of plywood.. The only advantage it gives you is if its like the transom in the link, it will (can) fill the entire low area raising the whole transom so there's chance of water splashing in.
