How hot is TOO hot ?

I have a 1987 45HP Mercury and runs fine, planes the boat and seems to be OK for now. I do notice it takes a minute for the pee hole to start spraying, and when its up to normal running time, have run the boat some, the water temp (with my hand) is too hot for me to keep my hand there. Is there a particular temp I need to beware of?

I am new to motors so if I should replace something, can I do it? Or should I take it somewhere ? I am handy with tools.

It could very well have a thermostat that needs to be changed, On my motor there was an ok stream of water coming out when i running the boat with the open throttle, and hardly anything at lower RPM's. Did have problems changing it, the bolts for the thermostat housing broke off in the block. Now that everything runs fine the water still is pretty hot and cant keep my hand under it stream
