I have just got a 1962 28hp motor up and running .I decided to drain the gearbox oil after about 3hours use to see if any water had got in. The oil came out black so it looks like the gearbox is watertight. I can't remember how much oil it took to fill it up originally, about 300ml came out of the gearbox which seemed a little less than I put in it. I?m assuming that a gearbox wouldn't lose any oil without some water getting into it as well. How often would you check for water leaks and is 3 hours use enough to show up any water leaks?

yes 3 hours will show up any leak.
I check after about three or four minutes, then after a days boating and if they a both ok i dont check for another ten or so trips.
To me that generally leads me vulnerable only to a catastrophic seal failure. Fishing lines can do that but even then its generally i found only a slow leak.
