How to remove the cables from this dual Big T

Hi All. Spring time and back to work.
I need to replace my steering cables.
I have this Big T helm and it has 2 cables. Ive seen plenty of the single cables, but I have not seen dual. I can't seem to figure out how to remove the cables.
I turn the wheel 1 way and the cable comes out until the other cable meets the helm and then nothing can move any more.
I thought about just unbolting everything. but I thought I would come here first and hope that I could get an answer instead of possibly doing something wrong.

So I decided to just go for it and disassemble.
Am I going to be able to replace this?
It is 1 cable
