First, make sure you know what tranducer you have. At 7 pins, sounds like one of the old 3D transducers. The 3 beam, quad beam, wide side, with and without temp, only use 5 of the 7 pins. While you might have a "working" pair of wires, it might not be for the element that is pointing straight down. Also, it may be an element designed for a different frequency than the 200DX. Not sure if a mismatch will cause problems longterm, like frying the driver chip in the head unit. Best to ask HB tech service.
I think I have a schematic (400TX which uses that connector) at home and would be able to give you a decent guess for which 2 pins it should be, also the temp coming from the transducer.
On your 200DX, the transducer had its own 2 pin connector. Speed and temp came into the connector between the power plug and 2-pin xducer plug, which is different from the 7 pin. To splice in a combined xducer/temp on your unit, you will need that connector plug. Also, your new transducer may be sharring the ground pin for temp and xducer elements. You might have to split this, and that may cause some noise issues.
If you have a seperate temp probe it should already have the correct keyed connector on it. If not, it is probably one from the older TCR units. I believe the TCR probes can work if wired, but they will report the wrong temp.
