Idles Fast, and bogs at first when throw to full throttle pulling up a skier

OMCobra 5.0FL 502APHUE, SN: T01280724. Recently rebuild carb. Took around lake to check out rebuild and ran better than ever for the touring trip around the lake - run the boat for about an hour. Didn't make any adjustments. Left idle adjustment screws at 1-1/2 turns back, Idle was good, moving throttle in./out of neutral was smooth, full throttle was smooth. A few days later, took a few adults out who wanted to learn to ski. Lots of starts at full throttle. As the afternoon went on idle kept inching up. turning idle adjustment screw back didn't make a difference. I could manually pull the throttle back on the carb to turn down the idle, but next run, the idle would stay high again. With high idle, was tough/rough to get throttle in/out of Neutral. After about an hour of skiiing, when throwing into full throttle to pull up a skier, engine would bog. Pull back a bit on the throttle, then go back to full throttle and it would run fine while pulling a skier around the lake. Not sure if this is all throttle adjustment or if something with fuel system. Any advice appreciated.

Your carb does NOT have a throttle return spring
Remove the throttle cable from carb and adjust mix and idle stop to obtain required idle.

Now Stop messing with the idle mix screws and idle stop screw

Adjust the throttle cable to just fit on carb and bracket. Once it will fit, adjust the cable barrel nut another turn toward the carb to help hold it closed.
