Re: Low Carb diet.. Who is on one???
Best thing to do is get on South Beach, do a lot of veggies lightly steamed

Be creative! Cauliflower and turnips are both wonderful steamed til mushy, (no light steam here) a little fat free half and half and some butter spray, pepper and garlic, mash or whip til you have mashed taters, tastes a LOT like mashed taters too!

do a search for low carb forum and youll find low carb friends, active low carber, lots of them

Bread machines are your friend too, take a
little trip by clicking here and find some truly good recipes

you dont want to go too high on the glycemic index, and you definitely want to cross link carbs with protein. Try to stay away from those evil taters, white bread, white rice, anything minus its hull is pretty bad for you

all protein is bad for you, your brain runs on carbs ultimately and you need em, you just dont need a diet of ALL carbs, which is what the buzz was in the eighties

here is a recipe for bread youll like

1.5 c tepid water
1 c Vital Wheat Gluten
1 c Flax Meal
3/4 c Barley Flour
pkg fast rise yeast
couple of cranks of fresh ground pepper - call it 1 t (but my grinder was set for coarse and it CRANKS, but as you like it)
same amount of garlic, same considerations, I used T, you can use t
1.5 t caraway seeds - those of you longing for rye bread, this gives it a savory kick in that direction!.

I set my machine for dough, and let it do its thing. This made four hot dog rolls and four hamburger bun sized rolls, then I brushed them with a beaten egg and put more black pepper and garlic on top

40 mins at 350, and they were great, and low carb to boot, Crunch the crust, chew the inside, like a bagel only without 70 carbs

Get some beano though, going to a vegan-esque diet takes your body a while to get used to!
