I have a 1971 16ft starcraft aluminum open bow that i gutted out. My father is a contrator and we recently built a porch on an old house using toung and groove Mahagony boards 1 1/4 thick. does anyone think that these could be a option for my boat, just as a basic deck to build off of.

Wow , mahogany is nice stuff. Most likely African?
I would resaw it to about 3/4" thick and use it alone. How wide are the boards?
I don't know if you will have trouble with expansion across the grain if its glassed in.
Lets see what the experts say.

Welcome.
