Mercruiser 470 WOT RPM 170HP

Hello everyone,

My boat is an 1977 Fiberform 18' Bowrider with 470 Mercruiser 170HP. My outdrive is a MC-1, My propeller attached is a 14.5" x 19" pitch aluminum.
Here is the following that I did to my boat for you to understand my questions and topics:
1.) I just recently have a problem on the cooling system where the anti-freeze contaminating the engine oil.
It is a big pain and I'm glad that this was resolved and fixed by replacing the 2 seals at the front engine.
2.) I also have a leak of hydraulic fluid where the pump goes to a connector, from that connector going to the trim cylinder and this is fixed and resolved as well by replacing the O-Ring.
3.) I rebuild the outdrive by changing all the seals, impellers and gasket and everything and is now working excellent with no leaks at all (for both lower and upper).
Before this series of projects, when I was using/running the boat last summer of 2013 my WOT RPM was ranging 3800-4200 which as per Merc specs.
When evrything was in order and done I put the boat into the lake (water) and tested, run it going into plain for so many times I noticed that I'm exceeding the range of the WOT RPM (3800-4200).
The engine can go up to 4800 RPM. While doing this the engine gets overheat and steam coming from the carburetor (maybe this is the residue of the coolant that leaks before).
When I get off of the plain and just idle the temp gauge goes to normal. When cruising into normal RPM like 30-40 evrything looks fine.
I'm just wondering what happen during the process that I did, is there something that I need to adjust or look into like changing the propeller or so. Any advise or warnings that I need to know.
