I plan to do so trolling this year and would like to get some recomendations on a minimunm RPM to avoid any build up or fouling issues.

I have 27' chaparall with twin 115's. My plan is to run one motor with a drift sock or two as needed to achieve the speed I need (.5 - 1.5 mph).

That drift sock should help. Using 100% synthetic oil will help a lot. Make sure that engines are running at the proper operating temperature.

a temp guage and water pressure gauge would not be a bad idea. i think i would alternate engines. one this trip the other the next.

As suggested, as long as it is cooling properly and you are using the right oil, there should be no problem with running at idle all day long. I do it all the time.
