Need help with electrical issue

I've got a '79 Wellcraft 190 Airslot that was in need of some serious tlc. I spent the past year or so rewiring the entire vessel. My issue now is that I have a problem with accessories robbing voltage from each other. When running with my vhf radio, fishfinder and running lights on the backlight on the fishfinder dulls when trimming the motor up or down. Also when turning the battery selector switch from 1 or 2 to both, I can't trim the motor up or down with out the fishfinder cutting out. Also when the switch is on the both position there is a lot of whine coming through the vhf radio. I 'm not sure where to beign to resolve this issue. Any help would be greatly appreciated. You have a voltage drop somewhere. How big are the wires that you ran for the power and the ground to your fuse panel?

Measure the voltage at your fuse panel when you turn various items on. If the voltage drop is at your fuse panel, you just need to work your way backwards to your battery. You should have put a circuit breaker or fuse at the battery that feeds your main fuse block. You did that right?

Regarding why your trim is affecting everything...your power to the trim should come from relays mounted next to the trim pump. The wires that control the relays come through your main fuse block. The wire that feeds the relays should come from the battery and through a circuit breaker.
