Need Mounting help.....Short shaft to long shaft

I have a 1965 65 Mercury short shaft that I am changinging out to a 1972 65 horse evinrude. I have a setback on my boat now that drops the merc down about 6 inches from the transom(hopefully shown in the pics) I have a after market Panther tilt and trim on it. I want to switch to the long shaft evinrude. What it the proper method of getting the proper height/alignment on the cavitation plate on the outboard to the bottom of the boat...... any ideas on the best process to switch from this short shaft motor to a long shaft. The aftermarket tilt and trim will have to be bolted to the transom. But i need to know how to get the height right.

pretty hard to see in those pictures, but it looks like the long shaft should maybe bolt straight onto the transom, without the bracket, the cav plate needs to be approx level with the very bottom of the hull when in the vertical position.

A jack plate would work well, you can get power or manual styles. then mount the trim setup to it.
