My new raw water pump arrived and I am about to mount it to the bracket the old one was mounted. What I did not do is watch for the orientation of the pump to the bracket on the old one which has been removed from the bracket. I understand, if I do not mount it correctly such as upside down, it could be ruined and not pump properly? This pump will be mounted to my starboard engine. Is there a way for me to make sure I am mounting it correctly to its bracket before I mount it to the engine?

The bolt pattern should only allow for it to mount in one orientation. The issue with running the pump is with the mounting of the hoses. Make sure the intake hose goes on the intake side, which in most case is the top. The hose locations should be marked. Other then that so long as the pulley lines up you good to go

My 7.4 is in the same serial number range as yours and being an mpi it has a 160 degree thermostat so if you really are only seeing 155, then the engine is not warming up enough to open the thermostat.
May just be a gauge reading wrong as we know that happens a lot (mine actually reads a little high) but might be worth checking.

I never thought an engine could run to cold until I started following the forums here a few years back........
