New Steering Cable

I am in need of a new steering cable. I have a Alpha one and looked over the weekend and have the cable running from the wheel to the control valve and then through a cable guide and then attaches to the outdrive.

What I am trying to figure out is how hard this project is? I have looked at the manual it states that power steering hoses and the adaptor block need to come off to get this process done. Is this a difficult project? I have replaced my own exhaust manifolds and risers so I am somewhat handy.

I called the shop and they are wanting around $500 to do this job. Is this a hard job and how long does it normally take?
Just another note, It looks like I have the rack and pinion steering system on the boat.
