newbie, what to do, who to trust.

I recently bought a 1448 mod v with a 2000 2 stroke 25 merc jet outboard. you guys have helped me alot so hopefully you can point me in the right direction. I made my first run this morning and it was not successful. The stream from the water pump was not right. It was sporatic and not very forceful. And the effect it had on the motor was tremendous. It would run then get to hot, then start pissing, then run good, then stop pissing, then run bad. The water I was running in was just above freezing. I thought it was a pump problem, but come to find out there is a thermastat that regulates the **** stream. This Thermastat was shutting off my steam until just about the point of over heating then opening just enough to cool then shut back down. I was told I could remove the tstat to fix this. I did and it ran great. Now here is my ? Obviously it was there for a reason . What is the positive vs the negative. I like seeing that healthy stream I know I am cooling. Also why would they ever invent a complete shutt off type tsat I could see regulating but not complete shutt off. ( to much at risk) And if your were to feel the motor the temp changes so much so rapidly using these t stats in 33 degree water. That rapid temp change over and over cannot be good . Anyone know what I am saying here? sorry for the book just wanted to explain correctly

Your right if Mercury could have gotten away without the cost they would have. Someone gave poor advice about removing the thermostat, get a new one and replace it. The engine needs the heat at idle to run the best.

I suspect you have an aftermarket POS t-stat in there. Any merc t-stat I've seen has a small notch or pin hole in it to bleed off the steam pocket.
