Old Johnson stalls going uphill

My 53 Johnson Sea Horse 25 runs good but stalls just when you don't want it to. When fighting your way through big chop in the river sometimes the boat will be going "uphill" for many seconds trying to get over a big wave. Then, the motor dies. With the tilt, I think the carb float has shut off the fuel and then the engine uses up the fuel in the bowl and then it dies. This is of course, a very inopportune moment for the thing to die, since the huge motor yachts, Donzi's and Cigarettes are nearly swamping my 10'4" boat with the motor running, much less with it off.
Is there a float adjustment to be made (the float and all replaceable parts in the carb are new)? Do all these motors do this? Do all carb motors do this? Maybe on longer boats the "uphill" angle isn't a great, so it isn't a problem.

interesting post, Seahorse. It sounds like you are trying to navigate the channel at Grand Haven or Saugetuck during prime time. The rivers here are as bad or worse. My best guess would be a carburetor float adjustment.

That's a heavy motor for a 10 foot hull -- curious. Do you race with the old '53?
