Overheating Question Help

hello to all, first timer. Just bought a 1998 Johnson 50 hp been to the lake few times and runs fine but here is my concern. I notice that if I put my hand on the head is super hot, hotter than all of my past boat, but the water coming from the pee hose is nice, strong and cool. So i went and replace the thermostat (cheap and fast) also bough a thermometer, when the engine start to warm up it stay at around 140f for little bit than go to around 164f and from there goes up and down between 164f to 155f. I dont even know if there is an alarm on the boat, havent found one. So long story short, Im very confused because the head being so hot is a sign of overheating plus the 164f, but the water from pee hose being cool and the fact that it stay running fine when i take it to the lake is a sign of not overheating. Confusing, any help will be appreciated. Thanks

Pee hose will be cool as that comes off the engine BEFORE the water goes thru the block.------Test your overheat horn in the control box.----Install a new impeller if you do not know the age / condition of it.
