just wonderig can the shaft and bearings be removed out the back, leaving the engine and flywheel in the boat

If you in fact have a 260 V8 engine, then yes you need to pull the engine.
AQ-280 out drive/ AQ-260 motor
Not the single bearing with an AQ V8.
Find out what engine you have for sure. Volvo didn't use the 307, 305 and 350 yes, just not the 307.
i messed up its a 305 with orange housing, the boat is an 1984 cruisers inc 24 foot, i saw the shematic on the flywheel housing and have found all the parts online everything crosses over to sierra numbers except the bearings, but they should be no trouble as long as i can gat a number off the race

I did this job on my 86 contessa about 5 years ago and scoured all these boards or information. I'll copy and paste the information I finally went with.
And just to be clear, I am not a pro but a do it yourselfer so do your own homework on this job. My info is from 5 years ago and maybe things have changed since then.

PDS Bearing info: Industry Standard # 6206 and #6007 "open" bearings in the equivalent of an Electric Motor grade.
No Chinese bearings!
Seals are both 35x 62x 7mm in either Timken or TCM of which are rubber encapsulated.
Pre-fill the grease cavity before installing the seals.
Glue or stake the forward seal in place so that grease pressure cannot blow it out of position.
Be sure to install the aft-most seal in the non-conventional orientation.
