Quick drop in oil pressure then stable again

Hello, I own a 2000 Four Winns 180 horizon with a volvo penta 4.3.
I recently had the engine replaced because it was not winterized correctly.
First time on the water with the new engine I had the dash oil pressure alarm sound off.
Took it to the shop and they confirmed the pressure in the engine is good, replaced the oil pressure sender and the problem continues.
Since it is $850 to purchase a new gauge cluster, I purchased a standalone oil pressure gauge and connected it directly to the sender.
Once connected I noticed the new gauge will dip to 0 psi when decelerating from a high speed. but it will only dip for less then a second, then it goes back to normal pressure. Is this normal? could this quick dip be setting off the dash alarm? The original gauge did the same, it just moves a little slower.

The engine has a second oil pressure alarm. This one has not gone off at all. only the one from the gauge cluster.

Can you guys help me out? Is this normal?
