Rebuilt floor question.

I did a total floor stringers and transom rebuild. I drilled holes 24" ft. Apart. Then mixed my foam and poured it in the holes until it expanded out the others. Some times I didn't have enough, so i added more. I assumed it filled the void.
I used a level from side to side to indicate the vertical motor position. Then, I drilled the holes for the motor.
It took me a long time to build. Here's my problem. Boat sits level in the water. But when get the speed up around 20 to25 it start dipping on the left side bad. This going straight.
It will turn smothly to the right. But it when I turn to left it digs in and doesn't want to turn. I can turn because I have hydraulic steering. But this causes the left corner to be at water level or lower.
Would it pull like this because the motors is out of plumb?
Or has rain water got in and over my joist somehow when the boat sit through the winters.
If I rule out the motor being the problem. I will start drilling 2" holes on the left side look for voids and water.
I know its a long post but if anyone know how a tilted motor would effect the boats behavior.
In front of the boat is a bridge. Looking across the depth finder you can see how low the left side rides...

Have you adjusted the trim tab on the motor ?
No.but changed motors a couple of months ago and did the same thing. I definitely with checking out. Im also running without my hydro foil. I have noticed the propeller throwing water up out of the lake on the right side. i related that to not have the foil installed
