Just wondering about the reeds. How often should they get replaced?
only if one fails or x amount of hours/ time

do they slowley go out bringing down preformace a little at a time or do they always just fail 100%?

Usually weak reeds will mess up the idle. Considering the age, and the fact that steel reeds tend to do some damage going through the engine if they fail, it might be time to find an excuse to put in a set of fiberglass reeds. It's a reasonably easy shade tree project, and if tune is in doubt would be a good time to throw in carb kits and a fuel pump kit. Any of this requires a link n sync afterwards, so might as well do it all at once.

I did not know about fiberglass reeds. Is there a brand I should look for? Any brand/type I should stay away from?

I may tackle that project this summer.
