So a general question:

In my relay box, there are a bunch of fuses and three relays (plus a spare). The relays are labeled start, ignition, and fuel.

So what is it that these are doing? Any Google search I do about start vs. ignition relays just brings me back to starters....

the start relay is the pilot relay for the starter
the ignition relay is a pilot relay for the ignition so you dont have a significant voltage drop
the fuel relay runs the electric fuel pump

exactly like the label says start, ignition, fuel

they are all VF4 style relays
