Replaced starter, now shuts off when key is released?

Good morning all, I am hoping someone here can steer me in the right direction before I have to throw in the towel!

Up until a week ago my boat has been running perfect since I have owned it (2 years). We were out tubing with the kids and turned it off to switch tubers and when I tried to start it the starter failed. The first 3-4 times I turned the key, the starter responded with a grr-chunk, grr-chunk, grr-chunk, and then on the 4th or so try, the solenoid switch on the starter 'fused' shut resulting in me have to pull the battery cables to stop the solenoid from running. After removing the starter and testing, just touching the main stud on the starter would start the solenoid without the need of crossing over the smaller 'switch' studs. Also, the bendix was spinning but was coming out of the housing. After researching the cost to replace, I decided to have it rebuilt by a local recommended starter / alternator rebuild shop.

Now to my current problem!

I picked up the starter the night before last, installed it, and hooked up the water hose to engine to start it while trailered. Upon turning the key the engine 'roared' to life (as usual) but after releasing the key to the run position, it immediately shut off. Subsequent attempts resulted in the same outcome. It has never had a problem starting and has always started and ran after at max the second attempt. I have checked all fuses with a meter and all ohm out fine. When turning the key to the on / run position, the gauges move and the alert buzzer comes on as usual. I have checked the safety lanyard switch and when removed, the alert buzzer no longer comes on when the key is turned so, it appears to be functioning properly. Best I can tell the entire solenoid was replaced on the starter, could the new solenoid have something to do with it? Could there be an issue with the ignition switch? My boat info is below, any info would be greatly appreciated!

I have checked the ignition switch however, I cannot say 'thoroughly'... In the off position, I have power to one terminal, in the run I have power to two, and it cranks when turned to start so, the third definitely has power then. My only issue is when looking at the diagram from the manual, there are only 3 terminals shown however, the actual switch has 4 terminals. See attached, what is this 4th terminal for? Ground??

4th terminal is usually accessory position.
