running hot 1966 105

Last year I noticed the head gasket was possibly blown as I only had 60 lbs of compression. I have replaced the head gasket and the exhaust port gaskets since. I used a friends infra temp gauge as I was running the motor in the driveway with the muff on it and there were areas of 240 -245 degrees. It feels like it's running hotter than I can ever remember. I also ran it at a lake and there was a pinhole size water squirt out of the top bolt of which I have stopped but the point being it was getting water up on top. I hear there is a small plastic bypass spring thing that goes into the block ... would this cause the oeverheating or running hot ? What next ?

That pinhole stream of water you see coming out that bolt says that water is circulating. I believe the bypass you mention is there for when the Thermostat is closed so that water pressure will still circulate because the impeller and water pump are always running. Is water coming out the telltale when motor is running? If thermostat has not been replaced in a long time you might want to consider doing that along with replacing the grommet and the housing washer for the thermostat. If water is coming out the telltale it should be pretty warm. Also make sure your impeller isnt more then two years old. My 67 45 HP chrysler runs hot too but does not over heat. The head is so hot I cant keep my hand on it for more then a few seconds, but will run for an hour without problems.
