I still have and use my 1986 Sierra Supreme boat with a trailer like the one you mentioned. I don't know anyone else who has this type of boat. It's a lot of fun!
I have almost always driven it up onto the trailer with someone at bow to lift the lever up to catch the eyebolt. Once when the engine wouldn't start, I used a winch that was mounted in truck bed to pull it up the last few inches (after we pulled it out of the boat ramp and onto level ground). But the disadvantage of that is you have to unhook the winch hook in order to get the eyebolt through the lever. But it can be done that way.
As far as off loading, I have not have to start the motor to drive it off and disengage the lever from the eyebolt. I just back it up far enough into the water until it floats off. Then I either push it all the way off or put it in reverse. The operator's manual does say it may be necessary to drive it forward slightly to disengage the lever, but I have not found that necessary.
