Skinning Chickens

We have some roosters and hens that need to quit gobbling feed and go somewhere, preferably into a chicken salad sandwich!

Has anybody ever skinned chickens, instead of the scalding, picking method? if so, how about some instructional tips?

I HATE picking feathers. As a kid we had to help some freinds of my dads at there farm. We'd wring some necks, dig taters, pick tomatoes, okra, and corn, etc. The plucking hoovered big time. Since then all my birds but a few have come from the market ready made. If I have to kill a bird it gets skinned. Same for hogs. Boiling and scraping is for somebody else. Cut the feet and neck off and trim around the bung hole. Pluck a small area on the breat in the middle. Make a slice in the skin just long enough to get your fingers in. Slide 'em in and pull down. The rest will just fall in place. You'll tear up some of the bird the first couple of times but its not too hard, esp. when you consider plucking.

As kids 5/6 years old Grandpa would cut off the heads then it was
somehow our job to do the dunking and plucking... arrrg :)

Sort of like filleting bass. First few times your going to mess up a bit.
Learned KBs method for field dressing and cooking grouse while stream fishing.

Yes, pull a few feathers off until you can grip the skin at the breast, and cut through it, then start skinning.

I just did this on a ten-month old rooster last week :)
