Let me suggest that you go to the ramps where you would normally launch your boat and see what kind the locals are using. Ask them some questions when one catches your eye. Skinny water and cuddy cabins don't usually go together too well, so some local information will be useful. You have a beautiful area to boat in.

I have a 96 Century 23' cuddy and it takes about 3.5 to 4' to plane out in, and then will run in about 2.5 to 3.0' without a whale tail.
