Slipping and sluggish

I have a 1999 Bayliner 2655 with a 5.0 and a bravo 3 out drive. When first hit the water it runs great good throttle response and quick to plane. After 30-40 minutes into the day it starts to slip and gets really sluggish. When I throttle down and start again it won’t pick enough speed to even come to plane. I still idol around and get the motor up to around 2500 ramps and it will run smooth but not fast. If I try to push it up 3000 or 4000 it does the same thing all over again. If I take a break and swim or fish for a while I can go again just like the start of the day. Any ideas or suggestions?

Fuel tank pick up clogged. Fuel filter and or water in fuel.

Above true if all other things are well and healthy...prop hub, diz cap etc etc.
