spicey venison jerky

I made up a new jerky recipe and it is good. <br /> 1/2 cup soy sauce<br /> 1/4 cup water<br /> 1/4 cup wine vinegar<br /> 1/8 cup balsamic vinegar<br /> 1 tsp Franks red hot sauce<br /> 1/3 tsp +/- salt<br /> 1 1/2 Tbs whole pepper corns (crushed)<br /> 2 Tbs brown sugar (enought to balance the vinegar)<br /> 1/8 tsp cayenne pepper <br /> 1/4 tsp crushed red pepper<br /> 1 tsp +/- liquid smoke<br /> 1/4 tsp granulated garlic<br /> and a splash of SUPER HOT sauce<br /> <br /> cover meat with above mixture and refrigerate for 4 hours or more. dry in dehydrator or oven at 155 degrees f. note: all measurements are just close, I don't measure when I cook. This stuff will warm you up on these cold winter days.

Thanks OMC, I was looking for a new receipe. Get tired of the same stuff after awhile. Looks like this will shake up the ole taste buds. :D

Sounds yummy, OMC.<br /><br />I generally smoke my jerky for about 20 minutes in my stovetop smoker before I dehydrate it in a 150' oven. <br /><br />I will try your recipe. I have just marinated in 50-50 teriyaki and Worcestershire sauce. My ulcers can't handle the hot spices.<br /><br />Good snacking! :)
