204 Escape

O.K. here we go. I have a 20' LARSON 204 Escape deck boat, with a 5.0 V-8 carburated engine. I'm considering a stainless steel prop for it, as I think that it would be better for the boat overall.
I do NOT understand pitch, at all.
I just looked at the # on the prop, and it is as follows: 832830445P19
I assume that the last 2 #'s (19) is the pitch of the prop.
I e-mailed LARSON, and I ask them about a different pitch prop, and they told me to go to a 18 pitch 4 blade. (I'd inquired about a 4 blade). (They talked in generalities.)
The present prop seems to do o.k., in as much as take off, etc. I was wanting a good hole shot, as well as more top end. (I still have some kid in me that likes speed).
Presently the boat runs out at WOT at 50-53 mph, and I think the rpm's are about 4300 (I may be wrong).
The boat weighs 3100 #'s.
What in you all's opinion would I gain, or lose with a 4 blade prop, of stainless steel over say a 3 blade prop??
I'd like a twin prop set up, but I'm not sure what that would entail. (I assume a different shaft, if that is even possible).
