Suzuki not running good

Just bought a 1991 Suzuki DT 25, ran fine in garage with water jacket on it. Just had new head gasket, impeller, heat sensors thermostat put on. Prior owner blew the head gasket. I took it out for first run. Accelerated good, pee was intermittent, even at high speeds, never a fast steady stream. I backed of the throttle slowly down to idle and the motor stalled. Fuel line bulb was hard, vent on gas can was open. Had to use chock to restart. Now at idle motor is running only on two cylinders. Occasionally it would go back to three, give it the gas and it takes off on three cylinders, slow down it goes back to two, most of the time and then stalls again. The hot light or oil light only comes on for a moment when you start the motor, no audio alarm, so I am assuming it alright. Where should I start looking for my problem(s).
My trade in ran better than this one and it was 20 years older.

ttp

Based on the history of the engine you need to investigate whether the engine is overheating. The engine should pee consistently but that is an indicator stream only and it may be due to water pump wear or the pee hole may just be clogged. The horn may or may not be working correctly. Also it sounds like you may need the carbs rebuilt. An infrared thermometer from Radio Shack is a inexpensive (~$50) way to confirm block temps. Start with the basics.
Cooling
Compression
Spark
Fuel
