I've got a 2004 Starcraft Stardeck with the 5.0L carbed engine. I can't for the life of me get the oil filter off, so I was going to take it to a shop. They said they use a synthetic blend instead of pure synthetic because it was better at preventing rust.

Should I stick with pure synthetic or is this ok?

Thanks,

A strap wrench would probably get the filter off.

I have the same engine, and Volvo recommends 30W synthetic. If the engine isn't leaking coolant into the oil, I'm not sure why any good oil would have problems preventing internal rust. I'm using 15W-50 Mobil 1 in mine, but any good 30W, 15W-40, 20W-50, 25W-40 synthetic or dino should be fine.
