Re: Tabasco

I have to agree with Klondike on this one, I love Louisiana Hot Sauce. The best for my taste buds is Trappy's. I prefer the taste of cayenne peppers to tabasco.

Since I accidently bought cayenne peppers for the garden instead of jalapeno's, this year I will be making my own. I found a recipe and there is nothing to it. Grind up the cayenne peppers in the blender simmer in vinegar and a little water and can it. I still need to find the right kind of bottles though.

Down here we have "Kaitaia Fire" made from NZ grown chili peppers (not sure what type), it's good stuff too. Tabasco is still my preference.

I haven't seen or heard of Louisiana Hot Sauce before, but I'll have to keep a look out for it.

Crab - sounds like you're more of a Tabasco adict than me :D ...MOMBOSA sounds like the go too. ;)

....just waiting for someone to say they've put it on their ice cream - that could an interesting experience

Re: Tabasco

I like it really hot. My favorite is Quetzlcoatl, grown deep in the jungle by inmates of a Guatamalan insane asylum. They have to stand by with fire hoses during tropical rainstorms in case one of the peppers gets knocked off the bush and sets the brush on fire. When I can't get this,I like Tabasco and Habanero Sauce, which is hotter than Tabasco.

Re: Tabasco

I like it hot too. tabasco just doesnt do it for me. every year i grow 6 habenero pepper plants and two super cayenne plants. I pick every pepper they produce and then dry them in a food dehydrator, then grind them as fine as i can with a coffee grinder. this makes the hottest pepper ever! I love it on everything, even have my wife carry a little shaker full in her purse. I just love that flavor of habenero. and kenny i get heartburn real easy from tomatoes, oranges, grapefruits,I never get it from my pepper powder. I gotta admit tho sometimes if i over do it the exit can be a little uncomfortable.

Re: Tabasco

Now you guys are talking. I love Tabasco, but my favorite to put on eggs and anything else is Cholula hot sauce. Lots of flavor and a good amount of heat.

When I am in the mood for something hotter, then Yucatan sunshine is my favorite. Habanero hot sauce. I love taking a chip and pouring this on it.

The only hot sauces I have not liked so far are the ones that are pure spice and capsacin like Dave's insanity sauce. I have had good mustard made with it, but just plain, it is hot and tastes like you are eating dry spices.

A good hot salsa is Mrs Renfro's Habenero salsa. Hotter than heck. Hot going in, hot coming out like Aces said.

I ate at a Tai restaurant in New York once. An interesting experience. I took a foot long black hair out of my soup. They had a whole bright orange pepper on my plate. They had not seeded the pepper. Now, I like things hot, and have chopped up Habeneros and eaten them on sandwiches. I stuck this whole pepper in my mouth and chewed it and swallowed. What followed was unbelievable. It did not burn the tongue as much as the whole heat went up into my sinuses and I could not see for a few seconds and could not breath. My whole head hurt, watering eyes, sweating. It was like eating a tablespoon of that green stuff that you get with sushi (Wasabi?)plus having a habanero in my mouth at the same time. It was a big mistake. My wife still thinks it was funny.

Re: Tabasco

Hot peppers are rated on the Scoville chart for hotness, (hope that's a real word) check this info for a hot comparison for some peppers,

Scoville Units were invented in 1912 by a pharmacist named Wilbur Scoville. These units measure the amount of capsaicin (the chemical that provides the heat) in a pepper.
Measuring by Scoville Units is very subjective. To achieve a rating, it takes three out of five people to taste the heat in a diluted solution of alcohol and sugar water. The ratio of dilution is the Scoville Unit. For example, the Chiltepin is usually detected by 60 percent of the testers when diluted at a ratio of 1 part to 50,000 parts solution (1:50,000 and up to 1:100,000).

Scoville Units Pepper Variety

100,000 to 300,000 Habanero
50,000 to 100,000 Chiltepin Thai
30,000 to 50,000 Pequin Cayenne Tabasco
15,000 to 30,000 De Arbol
5,000 to 15,000 Serrano
2,500 to 5,000 Jalapeno Mirasol Guajillo
1,500 to 2,500 Cascabel Rocotillo
1,000 to 1,500 Ancho Pasilla Negro
500 to 1,000 Anaheim New Mexico Mulato
100 to 500 Cherry
0 Bell Pimento
