With a properly operating 160 degree thermostat, mine would idle around 163-165. Puttering around at low rpms on the lake, it would run 170-175. At high speeds it would be anywhere from 175-185. This was in a lake that is usually around 85 degrees in the middle of summer.
From my Merc manual >> "Normal operating engine temperature taken at the water temperature sender with a direct reading gauge is 165F (74C) to 200F (93C) at WOT."
