Temp sensor or gauge

I'm pretty sure my temp gauge is reading high as I have tested the thermostat in water on the stove and the engine with an IR sensor when it was running. If this is true, is it normally the gauge or the sensor. And if the sensor, is there a special type of thread lock or Teflon tape to be used to reinstall.

Just use some gasket sealer on the sender threads, not Teflon tape. Use the teflon tape in your house, not your boat.
