I'm gonna try to make a gallon of them. :)

Whats the big secret to a great tasting pickled egg.

The BIG secret is to use REAL EGGS!! :D Sorry but I had to throw that out there! +1 on the beets too!

Heat all ingredients till very hot (boiling in fine)

2 cups sugar
3 1/2 cups vinegar
1 1/2 cups of water
1 1/2 teaspoon salt
2 #1 cans of beets (small) sliced or whole
optional ingredients (never Knew her to use, when I make them I never have)
2 sticks cinnamon
1 T. whole allspice

Put eggs in container (non metal) that can take heat then pour hot mixture over eggs, let set till eggs take color into them about 2-3 days.

Not sure if will make a gallon but will do 3 dozen eggs, can add more vinegar and add more eggs for second batch when first batch gone

#1...don't make a gallon...make a good sample batch to see if the recipe is to your taste.
#2....whole cloves.... split your sample batch in half .......finish 1/2 per the recipe, the other half stick 4 -5 whole cloves in each egg so it looks a bit like a WWII mine. After the aging period, try one of each as a taste comparison...I'll bet you end up with 5-6 cloves per egg :)

Oh....and at least 25% malt vinegar.

We just use the mix (follow directions) for sweet pickles from Walmart. Not the usual pickled egg taste but awesome and they keep very well. I have eaten some that were over 4 months old, kept in the fridge.

Just drop the eggs into the pickle mix, verses packing the eggs then adding the mix. Otherwise the eggs want to stick together.

I wish I had some right now.

Mrs. Wage's Polish Dill pickle mix.
One left over pizza red pepper packet.
Quart wide mouth jar.
One clove garlic pr. jar...Optional...
Follow directions on pickle mix. Add one pizza red pepper packet pr. jar.
Let it ferment in the fridge for two days.
Warn people to stay up wind of you after you eat these.

Edit: One package of Mrs. Wage's will make several quarts.
The eggs will come out green looking, so add drops of red food coloring if they look unappetizing to you.

How to hard boil eggs:

Place eggs into saucepan. Fill with cold water two inches above eggs.
Bring water to full boil, continue full boil for one minute.
Remove from burner and cover with a lid. Let it set for 12 minutes.
Place the eggs under cold running water until completely cooled.
Crack the eggs and peel under running water with the egg shells falling into the pan.
Place pealed eggs in a bowl.
Drain water from the pan and discard the shells.

never had one. didn't know anyone actually ate them. hmm now I'm gonna have to try them. we have chickens so eggs are plentiful. may as well give it a go.

so quick question, the recipe above says 2 cans of beets. not beet juice? just boil the beets right in?

This won't help but I make pickled beets from my grandmothers recipe. When the beets are gone I use the leftover juice with a splash of vinegar and make awesome pink pickled eggs. I can post her beet recipe if you want it, but it would take a while to get to the eggs you want, and I don't think it would work right and have the best flavor if you skipped the beets. Hmm, mouth watering, maybe I'll just give it a try,,,,,,,,,,

Spicy Cajun Egg Juice

12 hard-boiled eggs 2 ? cups vinegar
1 ? cup salt 2 tsp sugar
? cup water 2 tsp allspice
2 bay leaves 2 tbsp peppercorn
2 chili peppers ? tsp garlic powder

Never developed a taste for pickled eggs. When I was a kid my Pop was a bartender and there was a huge jar of eggs at the end of the bar that few would dare open. Must still haunt me.
