thermostat opening temp

What is the thermostat opening temp for a 1988 pro v 150. I shot the heads with a infered heat gun after the motor ran for several minutes with the garden hose and muffs. The warmest it got was 120 deg. running about 1200 rpms. I run this boat in very cold waters.(Lake Superior)thanks
