tilt trim Q on 85 force

I got a force with tilt and trim.
What my question is,when I put it in the water and lower the motor,it stops where it's suppose to I guess.
It hits a steel round rod that it rests on.

So thats the tilt part of it correct?

But actually I can go farther and bring it closer to the boat,which makes the motor level,or deeper in the water.

It's not level when I just lower it till it stops.
Whats the technical term for that steel rod?The trim?
Should I be bringing it all the way back when running in deep water?

Just curious,as it seems to plain out when its deeper,or level.
When I just lower it till it stops,seems to over run the prop,or make it spin sometimes when taking off.

That steel rod is the trim, adjustable for fine tuned running. Above that is tilt, used for trailering or keeping the motor out of the water during nonuse.
