Is it prefered to use a "Y" rope harness to connect to two points on the transom or just pull from one side?

Two points. The drag from the tow item tends to want to steer the pulling vessel when towing from one side. Towing from two points makes navigating the tow vessel easier. Also, obviously, towline and props don’t want to ever come together so plan ahead on appropriately managing the towline.

If you are towing a skier, it is a light load that can be towed from a single point, mid-stern.
