Trim Plate; You need it, right?

The guy that sold me my boat had it off in the glove box...(the same glovebox I couldn't get open a week ago). He said he didn't use it because it was only used to correct for pull in steering. I don't beleive him, I've heard there's other benefits like acting as an anode? Is this correct? What's the purpose? It won't hurt anything if I put it in with a straight orientation, right?

You are correct it is made of zinc and does act as an anode. It is also used to trim the steering at speed. Putting it straight won't hurt at all. If the boat pulls while on plane slight adjustments will remedy the situation.

Sometimes they get in the way of a big prop. They make a flat sacrificial anode (trim plate without the trim) for that.
