The amount you trim the motor while it will decrease load on engine and allow it to rev a bit higher it also ,will change the posture and handling of the boat.Depending on the water conditions being calm or choppy will also dictate at which trim position you run at on a given situation.Example: If trimmed too high while encountering rough water or large wake you could experience a difficult handling situation and possibly lose control due to the bow being light.You'll need to become familiar with your particular rigs handling capabilities and operate rpms and trim posture within it.

You get the best MPG at max rpms minus 1000-1500 rpms approx. So you might have to trim in/down again. Just a little. All depends of a lot of things like numer of passengers, fuel, waves and so on.
